Obtained from the special cuvée of Chardonnay and Pinot Noir grapes grown on the mountains, this Traditional Method gains its name from the dosage, which isn't added at the end of the maturation process. During the dégorgement, the same cuvée is added into the bottle without an addition of sugar, which means the sugar level in the final product is nearly zero.
Fine, continuous perlage. Shiny pale straw colour with distinct greenish tinges. Intense, highly refined nose that combines citrus and withe peach with a delicate minerality. The extremely long, elegant palate reveals considerable structure overlaying a well-balanced acidity and ends with notes of untoasted almonds and vanilla.
The vineyards, located at altitudes between 450 and 600 meters above the sea level, are cultivated in different areas: from the slopes of the cone-shaped alluvial fans in thge Dolomite mountains, where the chalky soil is rich in texture, to the Valle dei Laghi, with its well-drained marlstone and the Valle di Cembra, whose steep slopes are formed from gravelly glacial-fluvial deposits.
